Sensors at the production-area switches
Traffic is observed from mirror ports on the switches serving each area: raw mill, kiln and cooler, finish mill, packing. That placement gives per-area baselines, so a new talker in the kiln zone is an alert while the same event in packing might just be a new printer.

Tuned to the industrial protocols cement actually runs
EtherNet/IP, Profinet, and Modbus dominate cement plant floors, with legacy fieldbus bridged in. Detection is tuned to the behavior of those protocols between known controllers and HMIs, rather than to generic TCP volume.
